Each bean reflects the high altitude, which gives the coffee its lively acidity and delicate sweetness. This coffee has a pure, natural taste, yet carries something unexpectedly special— exactly the kind of flavor you’ll want to come back to . ACC is an association of farmers from the Cauca region of Colombia , founded in 2016 by Robinson Rivera with the aim of improving the quality of local coffee and offering growers a sustainable and meaningful alternative. Today, the association has 77 members whose small farms are located at an altitude of up to 2,100 meters above sea level. The volcano-enriched soil and cooler climate give the coffees a bright acidity and pleasant sweetness. ACC also has its own laboratory and a small fermentation center where natural and honey coffees with a distinctive character are produced. The coffee is processed directly on individual farms – hand-picked cherries are hulled, fermented for 12 to 18 hours depending on conditions, and then washed and dried. This allows each part of the harvest to contribute its own flavor and character to the final lot. The Castillo variety was bred directly in Colombia for greater resistance, but without compromising on flavor. It offers a beautifully balanced profile with a delicate sweetness, medium acidity, and a pleasantly clean body. Altitude: 2,100 meters above sea level.
