This coffee comes from 500 smallholder farmers in the Guji region of Ethiopia, who bring their handpicked cherry to the Guji Hadeso washing station. Guji is a distinct coffee-producing area, located approximately 300 to 400 km south of Addis Ababa in the Oromia region. Traditionally, Guji coffees were grouped with those from Yirgacheffe and Sidamo, but today they are celebrated for their unique local varieties and microclimates that produce distinct flavour profiles.
Farming in Guji remains largely traditional and organic by default, with coffee plants intercropped alongside food crops. Minimal use of fertilisers or pesticides ensures a natural growing environment, and most work, including harvesting, is done by hand. After selective hand-picking, the coffee cherries are delivered to the washing station where they undergo pulping, fermentation for 36 to 48 hours with frequent water changes, thorough washing, grading, and drying on raised beds under parabolic shade nets until they reach the ideal moisture content.
This lot is classified as Grade 1, the highest quality in Ethiopia, free of defects and cup faults. The washed processing method highlights clarity and brightness in the cup, and the coffee is roasted lightly, optimised for espresso.
