La Reserva
Marlon is a third-generation coffee farmer; who has won the Colombian cup taster championship in 2024, changing his path from commercial pilot to coffee producer together with his family.
“La Reserva,” is a family venture where Marlon works alongside his uncles. The farm is located in the municipality of Pitalito in Huila, Colombia. They cultivate varieties such as Gesha, Bourbon, Pacamara, and Sidra. The expertise of his uncles, combined with his training in coffee cupping, production, and sales, has enabled him to create a product that meets high-quality standards around the world.
Processing
Careful harvesting and manual selection are carried out at the peak of ripeness. The coffee undergoes double fermentation: first, a 24-hour aerobic fermentation in valved tanks, and second, a 60-hour anaerobic fermentation with the “mosto” and fruits from the passionflower family: passion fruit and gulupa.
Finally, a slow drying process takes place for 12 to 20 days (an average of 15) on African beds.
