Grown on La Riviera farm, this Sudan Rume coffee is cultivated at an altitude of 1,750 meters in Santa Rosa de Cabal, in the Risaralda region of Colombia. A rare and expressive variety, Sudan Rume is renowned for its exceptional aromatic potential and natural complexity. This batch is processed in a bioreactor with the aim of intensifying and enhancing the sensory profile of the variety. After pulping, the coffee is fermented in a bioreactor with an inoculation of selected indigenous yeasts (Kazachstania humilis) sourced directly from the farm. Fermentation is rigorously controlled for approximately 48 hours, with precise monitoring of temperature and acidity. Once fermentation is complete, the coffee is washed and then dried in the sun until it reaches 40% moisture content. It is then transferred to a dark room equipped with a dehumidifier to slowly reach a final moisture content of 11%, ensuring stability and precision. This controlled process produces a bright and elegant coffee, revealing notes of apricot, citrus, peach, and rose, supported by a silky texture and beautiful smoothness. This coffee was transported to Europe aboard a cargo ship powered entirely by wind, reducing CO₂ emissions from maritime transport by up to 98%. A direct route, with no transshipment, for cleaner, better-preserved coffee.
