About Aponte
This coffee comes from the Aponte Community in the Nariño region of southern Colombia. The Indigenous Inga people, descendants of the pre-Columbian Inca civilization, have lived in these remote mountains for centuries. In recent years, the community has successfully transitioned from illegal crop cultivation to producing high-quality specialty coffee. Today, numerous smallholder farmers grow coffee at around 2,150 meters above sea level on the fertile volcanic soils surrounding the Galeras Volcano, making Aponte one of Colombia’s most exciting specialty coffee origins.
Variety
This coffee is produced from the Caturra variety, a widely cultivated Arabica cultivar in Colombia known for its balanced sweetness and clean fruit character. In the high-altitude environment of Nariño, Caturra develops an especially elegant and complex cup profile. The combination of volcanic soils, cool temperatures, and slow cherry maturation contributes to its intense sweetness and refined acidity.
Processing
The producers process the coffee on their own farms using the Honey process. During processing, part of the fruit mucilage is left on the beans while they dry, enhancing sweetness, body, and texture. The coffee is dried on stacked, covered raised beds, which reduce water consumption while ensuring slow and even drying. The result is a coffee with pronounced sweetness, layered fruit flavors, and a smooth, velvety mouthfeel.
